Beet, Cherry, and Lime Immunity-Boosting Smoothie (Vegan / Paleo)

Meet your new favorite BEET SMOOTHIE. This refreshingly delicious smoothie is brimming with luscious dark cherries, earthy sweet beets, and fresh lime juice along with a hint of vanilla. This beet smoothie is a tasty treat that’s also healthy! Cherries, beets, and limes are packed with Vitamin C to boost your immune system and help you feel energized.

If you’re looking for some fresh “beets,” this recipe will put extra pep in your step and make you smile. Adding sweet cherries with beets is a delightful combo, and of course, you can’t “beet” the health benefits from both cherries and beets. These two foods are fantastically nutritious, filled with antioxidants, minerals, vitamins (including Vitamin C), and fiber. Although there are many factors that contribute to boosting the immune system, research shows that adding Vitamin C-rich foods to your diet may strengthen your immune system by increasing your resistance to infection while also decreasing the duration of illness in your body. Wahoo!

The lime isn’t too shabby either. This distinct citrus fruit is quite nutritious! Helping aid digestion, supporting a healthy heart, and improving the immune system are all incredible reasons to add fresh lime juice to your diet.

For an extra punch of Vitamin C, add a handful of spinach to your smoothies. Spinach is filled with immunity -boosting ingredients, and adding greens to smoothies is a great way to sneak some extra greens into your (and perhaps reluctant kiddos’) diet.

Although we prefer fresh fruit and using seasonal produce, it’s not always easy to locate fresh cherries and sometimes we really want them in our smoothies! If cherries aren’t in season, use frozen organic pitted cherries found at many grocery stores. Did you know that some stores, such as Trader Joe’s, also carry frozen ready-to-eat red beets? Yup! For the “ease” factor, using frozen cherries (and beets) is a great way to reduce prep-time when making smoothies.

Don’t be alarmed if your toilet bowl is bright pink or red after drinking this smoothie. Seeing pink pee may seem concerning, but it’s a common occurrence called BEETURIA that may happen after consuming beets.

Beet, Cherry and Lime Smoothie (Vegan / Paleo) Recipe

INGREDIENTS (Serves 1-2, depending on glass size)

  • 1 1/2 cups fresh cherries, pitted

  • 1 cup red beets, raw and quartered

  • 2 limes, freshly juiced

  • 1 cup almond or coconut milk

  • 1 tsp vanilla extract

  • a handful of baby spinach (optional)

  • a scoop of vegan protein powder (optional)

DIRECTIONS

  1. Gently wash fresh black cherries (if using fresh) and beets. Remove pits from cherries if not pitted. Frozen organic ready-to-eat pitted cherries work well too.

  2. Peel beets and cube or cut into quarters.

  3. Add all ingredients to a high-speed blender and blend until mixed well and smooth. Add more liquid if needed for a thinner consistency.

  4. Serve and enjoy!
