There are many ways to enjoy the vast nutritional benefits and delicious flavor of beets. Beet juice is jam-packed with antioxidants, vitamins, and minerals. Although beets, apples, kale (or spinach), and fresh ginger are super stars in this recipe, including some fresh carrots and celery adds delicious flavor and nutrients to the mix.

Juicing raw beets is a fast and easy way to add nutrients to your body; however, it is important to juice responsibly. Beets, especially raw juiced beets, are powerful detoxifiers, so listen to how your body responds to beet juice and juice accordingly. 

Save the beet greens to saute or add to smoothies, and the beet stems can be pickled as a delightful side dish.

Beet, Apple, Kale and Ginger Juice Recipe

INGREDIENTS

  • 2 small whole beets, sliced in half or quartered

  • 3 small apples, cut in wedges

  • Handful of kale leaves (or preferred greens)

  • 1 - 2 inch piece fresh ginger

  • 2 large whole carrots

  • 4 stalks of celery

  • ice cubes

  • a dash of fresh lemon juice (after juicing is complete) for added alkalinity

DIRECTIONS

Through your juicer, process vegetables and fruits. Use organic fruits and veggies when possible. 

Because this juice recipe yields two full mason jars, you may wish to split the ingredients to create equal portions for the jars. If you do not have mason jars, pour juice into a glass and add ice cubes if desired.
