MOOD-BOOSTING BEET AND ORANGE JUICE RECIPE (VEGAN / PALEO)

INGREDIENTS (serves 1-2)

  • 2 small-medium red beets

  • 2-3 oranges

  • 1/2 cup blueberries

  • a handful of spinach or beet leaves

  • 1 medium carrot

  • 1 inch piece of ginger

  • a splash of lemon juice

DIRECTIONS

1. Wash beets and remove tops (save for a beet greens side dish or add to your juice for extra nutrients. Peel beets if preferred. Cut into halves or quarters.

2. Peel oranges, removing any extra pith. Cut into halves or quarters.

3. Gently wash berries, spinach, carrot, and greens.

4. Place all ingredients into your juicer/extractor, starting with the beets and ending with the oranges. Since oranges have the most liquid, juicing them at the end helps push through all other ingredients.

5. Pour over ice or drink straight. Squeeze in a splash of lemon juice (optional).

6. This juice is so tasty that it will go fast, but if you wish to save it or have leftovers, place remaining juice in a mason jar with a sealed lid or other sealed container into the fridge and drink within a few days.
